The foundation of any great Greek salad is fresh vegetables. You should begin with ripe tomatoes—think juicy, sweet, and bursting with flavor.

Slice up some crisp cucumbers and red onions, and don’t be shy with the cuts. The crunch from the cucumbers and the sharp bite from the onions make every bite interesting and satisfying.

Greek-Salad

The add-ons: Those Kalamata olives are a must. Their rich, briny flavor adds a whole new dimension to the salad. Make sure to pit them for an easier eating experience.

Seasoning your salad is where you can make it shine.

Dried oregano is key—if you can get Greek oregano, even better. It has this warm, peppery note that pairs perfectly with the other ingredients. And don’t skimp on the extra virgin olive oil. The best Greek salads are generously coated in this liquid gold, which adds a rich, fruity flavor and helps meld all the ingredients together. A splash of red wine vinegar can also be added if you like a bit of acidity to balance things out, but it’s optional.

Here’s a little twist I tried recently that took the salad to a whole new level:

    • Refrigerate each ingredient in a separate airtight storage container until you’re ready to finish assembling.
    • If you want to complete the experience, have some fresh, crusty bread on hand to soak up all those delicious juices at the bottom of the bowl.
    • You can serve it as a first course or side dish with almost any main course.
    • Serve immediately!

Ingredients

  • 3-4 tomatoes
  • 2 cucumbers
  • 1 small red onion I’m using pearl onions
  • ½ cup Kalamata olives
  • 1 teaspoon dry oregano
  • ¼ cup feta cheese
  • 3 tablespoons red wine vinegar
  • 5 tablespoons extra virgin olive oil
  • Salt and black pepper
  • Basil or mint
  • 1 cup plain Greek yogurt

Instructions

  • The first step is to chop the tomatoes and cucumbers into chunks. Then, in a large mixing bowl, add your tomatoes, cucumber, onions, and olives.
  • Drizzle with olive oil and red wine vinegar, and sprinkle with the oregano and a pinch of salt.
  • Toss briefly, and if possible, refrigerate for at least 10 minutes (optional).
  • Next, serve it on a tray with a layer of Greek plain yogurt on the bottom Then, top it with feta cheese. Serve immediately!
