PARMESAN CRUSTED CHICKEN
Have you ever stood in front of an open fridge door, unsure of what to do for dinner? Here’s a fantastic dinner that the whole family will enjoy. I’m pleased to say that this recipe is worthy of a slot in your weekly meal rotation. This is one of my favorite chicken recipes to make for busy nights because it cooks really quickly without compromising flavor.
THIS IS WHAT YOU’LL NEED TO MAKE PARMESAN CRUSTED CHICKEN:
- Chicken Breast
- Mayonaise
- Oregano
- Lemon pepper
- Fresh garlic
- Salt
- Breadcrumbs
- Parmesan cheese.
Step 1: Begin with two larger chicken breasts that have been divided through the thickness to provide four smaller and thinner pieces that will cook faster. To do this, place one chicken breast on a chopping board, flat and smooth side down. Then, position the palm of your non-cutting hand on top of the breast, with the thick piece of the breast towards the tips of your fingers and the pointy end toward your wrist. Cut horizontally across the breast with a sharp knife, beginning with the long, thick side. Set aside.
I buy boneless, skinless chicken breasts and pound them to tenderize the meat. This is an optional step; however, it is strongly advised.
Step 2: In a mixing bowl, combine the mayonnaise, oregano, lemon pepper, minced garlic, and salt.
Step 3: Place the chicken on a baking sheet. Coat evenly with the mayonnaise mixture.
Step 4: In a small container, combine breadcrumbs and parmesan cheese.
Step 5: Generously coat the top of the chicken with the breadcrumb mixture.
Step 6: Bake in a 400° oven for 30-40 minutes. The chicken came out crispy and juicy!
I paired the chicken with this delicious roasted potato. It also goes really well with asparagus and mashed potatoes.
