Ingredients

  • 3-4 tomatoes
  • 2 cucumbers
  • 1 small red onion I’m using pearl onions
  • ½ cup Kalamata olives
  • 1 teaspoon dry oregano
  • ¼ cup feta cheese
  • 3 tablespoons red wine vinegar
  • 5 tablespoons extra virgin olive oil
  • Salt and black pepper
  • Basil or mint
  • 1 cup plain Greek yogurt

Instructions

  • The first step is to chop the tomatoes and cucumbers into chunks. Then, in a large mixing bowl, add your tomatoes, cucumber, onions, and olives.
  • Drizzle with olive oil and red wine vinegar, and sprinkle with the oregano and a pinch of salt.
  • Toss briefly, and if possible, refrigerate for at least 10 minutes (optional).
  • Next, serve it on a tray with a layer of Greek plain yogurt on the bottom Then, top it with feta cheese. Serve immediately!

Notes

TIPS:
  • Prepare the salad just before you plan to eat it. This ensures that everything stays fresh and crunchy. Letting it sit for a few minutes after dressing allows the flavors to meld nicely, but don’t leave it too long or it might get soggy.
  • Refrigerate each ingredient in a separate airtight storage container until you’re ready to finish assembling.
  • If you want to complete the experience, have some fresh, crusty bread on hand to soak up all those delicious juices at the bottom of the bowl.
