Cake:

  • The first step is to preheat the oven to 350-degree Fahrenheit. Then in a big bowl sift the flour and baking powder
  • Next, add the chocolate powder, sugar and a pinch of salt. Then with a spatula or spoon combine all the ingredients.
  • Next add egg, milk and oil and mix until well combined.
  • Spread some butter into baking pan and line with parliament paper. Then, pour the mixture into a baking pan and place in the oven. Bake for about 15 to 20 minutes or until an inserted toothpick comes out clean. Let it cool for about 10 minutes or until you are able to crumble the cake with your hands.

Now while the cake is cooling down, its time to prepare the raspberry mousse:

  • In a big mixing bowl combine fresh raspberries, sugar, vanilla extract, and mascarpone cheese. Using an electric mixer, mix until all is well combined and has a smooth texture.
  • Then, add some red food coloring to accomplish this more intense color.

How to assemble this Chocolate Raspberry Mousse Parfait

  • First, using your hands crumble the chocolate cake. This is the part that can be a little bit therapeutic if you ask me!
  • Now proceed to fill the glass with layers of chocolate cake(crumble) and raspberry mousse. Depending on your taste you can put one layer of chocolate cake then one layer of the mousse then add some fresh raspberries in between each layer or just put them on top. I even garnish with some mint to make it pretty! There is no rule when it comes to putting this delicious dessert together, just have fun with it.

This recipe makes for 2 to 4 servings. I use two 16oz dessert glasses.
