These chicken thighs are easy to throw together with minimal work and can easily be prepped beforehand! I encourage you to make extra because you will want seconds. The leftovers also make for a delicious lunch the next day. I personally like to pair this chicken with my Autumn Crunch Salad.
These Greek chicken thighs are full of delicious flavor and require only a 15-minute marinade. This is definitely not your boring, plain chicken! The meat is juicy and tender, which will be a hit with the whole family. It’s a great meal to add to your regular dinner rotation.
Greek Yogurt Chicken Marinade Ingredients
The best part! This recipe only needs a handful of everyday ingredients that you probably already have in your pantry.
- Chicken: I like to use boneless, skinless chicken thighs for this recipe, but you could also use chicken breasts or drumsticks.
- Greek Yogurt: I love marinating my chicken with yogurt because it makes the chicken so incredibly tender! The Greek yogurt adds a delicious tang to the chicken. And it also helps to keep the chicken moist and juicy.
- Garlic: Although I prefer to use fresh garlic cloves, you have the option to use garlic powder or garlic paste as a substitute.
- Paprika: Adds a nice color and flavor to the chicken
- Oregano: I use fresh oregano leaves, however, the powder works as well
- Coriander: Coriander has an earthy and lemony flavor
- Onion powder: adds a sweet and savory flavor
- Chili Flakes: Also known as red pepper flakes. Adds a mild kick of flavor and spiciness. I highly recommend it.
- Lemon: the juice of half of lemon
- Oil: I like to use olive oil or avocado oil in my cooking
- Salt & pepper to taste
How to make Yogurt-Marinated Roasted Chicken:
First Step: Pat dry the chicken with a paper towel to remove excess moisture. I like to score the chicken so the marinade goes right in. Season generously with salt and pepper. Set aside.
in a large glass bowl, add Greek yogurt and lemon juice to the chicken, and season with paprika, onion powder, oregano, salt, and pepper. I also added fresh parsley (optional).
Whisk until all ingredients are well combined.
Coat the chicken in the yogurt mixture, making sure to cover every part of it. Allow the chicken to marinate for at least 15 minutes. I recommend it because it gives the chicken plenty of time to absorb all of the flavors from the marinade.
Place the chicken on a baking sheet. Bake for 20-25 minutes at 400 degrees. I like to use this Oven Baking Tray with Elevated Mesh (Affiliate Link) and, look how crispy and juicy the chicken turns out.
You can also use your Airfyer for 12-15 minutes. The chicken turns out juicy and flavorful.
