Ingredients

  • 4-6 chicken thighs I like to use boneless skinless chicken thighs for this recipe, but you could also use chicken breasts or drumsticks.
  • cup Greek Yogurt
  • 1 teaspoon paprika
  • ½ teaspoon oregano I use fresh
  • ½ teaspoon coriander
  • ½ teaspoon onion powder
  • ½ teaspoon chili flakes
  • 1 tablespoon olive oil
  • 3 cloves garlic Although I prefer to use fresh garlic cloves you have the option to use garlic powder or garlic paste as a substitute.
  • Juice half a lemon
  • Salt and pepper to taste. I use ½ teaspoon each

Instructions

How to make Yogurt-Marinated Roasted Chicken:

  • First Step: Pat dry the chicken with a paper towel to remove excess moisture. I like to score the chicken so the marinade goes right in. Season generously with salt and pepper. Set aside.
  • in a large glass bowl, add Greek yogurt and lemon to the chicken, and season with paprika, onion powder, oregano, salt, and pepper. Whisk until all ingredients are well combined.
  • Coat the chicken in the yogurt mixture, making sure to cover every part of it. Allow the chicken to marinate for at least 15 minutes. I recommend it because it gives the chicken plenty of time to absorb all of the flavors from the marinade.
  • Place the chicken on a baking sheet. Bake for 20-25 minutes at 400 degrees. You can also use your Air fryer for 12-15 minutes. The chicken turns out juicy and flavorful.
