Simple Roasted Butternut Squash

Today I’m sharing my to-go-to Butternut Squash Recipe. It’s easy, simple, and delicious. This is perfect as a side dish or just toss them into a bowl of salad; Simple and Delish.

Ingredients

  • 2 ½ cups butternut Squash
  • 2 tablespoons light brown sugar
  • 2 tablespoons maple syrup
  • 1 tablespoon avocado oil (or any oil of your preference)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • salt to taste
  • black pepper to taste

Instructions

  • Preheat oven to 400°F.
  • The most difficult part of making this Roasted Butternut squash is to peel the squash. The first thing I do is to cut the two ends of the vegetable. then with a sharp knife or vegetable peeler, work downwards peeling off long strips. Then, proceed to cut in the center of the squash.
  • One of the sides has all the seeds. Using a spoon, scoop out the seeds and discard.
  • Then, roughly cut the butternut squash into small bite pieces.
  • Place the butternut squash into a mixing bowl and add 2 tablespoons of light brown sugar, 1 teaspoon ground nutmeg, 1 teaspoon cinnamon, 1 tablespoon avocado oil, 2 tablespoons of maple syrup, salt, and black pepper to taste. Stir to combine until all pieces are well coated.
  • Place the butternut squash on a baking sheet and place it in the oven for 20-30 minutes or until the squash is tender. Make sure to leave space between them, this way the squash will get nicely crisp. Enjoy this delicious Butternut Squash Recipe!
