To do this, place one chicken breast on a chopping board, flat and smooth side down. Then, position the palm of your non-cutting hand on top of the breast, with the thick piece of the breast towards the tips of your fingers and the pointy end toward your wrist. Cut horizontally across the breast with a sharp knife, beginning with the long, thick side. Tenderize and set aside.
In a mixing bowl, combine the mayonnaise, oregano, lemon pepper, minced garlic, and salt.
Place the chicken on a baking sheet. Coat evenly with the mayonnaise mixture.
In a small container, combine breadcrumbs and parmesan cheese.
Generously coat the top of the chicken with the breadcrumb mixture.
Bake in a 400° oven for 30-40 minutes. The chicken came out crispy and juicy!
