At this time, we all are bonding with our loved ones. This is a great moment to snack on something light and what a better choice than a big bowl of pineapple salsa. This Pineapple Salsa is a fun and easy appetizer that you can eat with some chips or as a side dish for some good juicy chicken breast.
Ingredients’ you’ll need to make this Fresh Pineapple Salsa:
1ripe pineappleabout 2 or 3 cups (dice)
⅓cupdiced red onion
Cilantro
Red pepper
Yellow pepper
Sweet mini peppers
Jalapenooptional
To make Dressing:
1Lemon
1teaspoon honey
saltto taste

How to make this Salsa
The first step is to Peel and slices the pineapple. I decided to cut the fruit in big chunks as I am going to pair it with chicken breast. However, if you are pairing it with chips my suggestion is to cut the pineapple in a smaller size for a better grabbing. Place the pineapple in a big bowl. I used the one I’m serving it.
Then, roughly chop the tomatoes, peppers, onion, jalapeno (seedless less heat), and cilantro. Proceed to make the dressing.
To make Dressing: In a small cup combine the lemon juice, honey, and salt. Set aside
Next, combine them with the pineapple, drizzle with the lemon honey dressing and gently stir until all is well combined.
Notes
*If you prefer a cold salsa place in the refrigerator for at least 30 minutes. This will allow the dressing and the juices from the pineapple to mingle creating a delicious salsa.
