Ingredients

  • 1 large chicken breast (or two small)
  • 1 teaspoon soy sauce (low sodium)
  • 1 tablespoon lemon pepper
  • 1 teaspoon olive oil
  • 1 tablespoon unsalted butter
  • 1 large lemon (divided)

Instructions

How to make this Juicy Chicken Breast:

  • Preheat the oven to 350 degrees. Season the chicken breast with all the spices. Drizzle it with soy sauce, olive oil, and lemon juice.
  • Place the chicken breast on a baking pan and cover it with foil paper. Put in the oven for about 15 to 20 minutes depending on its size.
  • Carefully remove the foil paper and increase the oven temperature to broil. Let it cook for 2 to 5 minutes or until the chicken gets a golden color. Move the chicken breast around to coat it with all the juices.
  • Remove from the oven, place the chicken on a cutting board and let the chicken rest for about 5 minutes. Do not get rid of the baking pan yet.

While the chicken is resting Let’s prepare the sauce.

  • For this, you’ll need all of those bits of flavor on the baking pan. Place the baking pan on the stove over medium-low heat and add some butter and half of the lemon. Let it reduce for about 2 to 4 minutes. (The sauce will get thick and dark in color).
  • Slice the chicken and place it on your serving platter and then drizzle the chicken with the sauce.

This chicken breast can be paired with a red and white cabbage salad, a creamy mashed potato or even a cup of fluffy white rice.
