Easy Stuffed Avocado Recipe

What’s not to love about avocados? They are healthy, creamy, and delicious, and today I want to highlight one of my favorite ways of eating them. These Stuffed Avocados are the perfect and satisfying lunch or snack option. They are deliciously stuffed with my flavorful ground beef and topped with a fresh homemade Pico de Gallo that makes the dish complete. In less than 20 minutes, you will be enjoying a dish that celebrates flavor and freshness. What a beautiful mess, right?

Ingredients

  • 1 ½ to 2 lb ground beef
  • 4 avocados ripe and halved
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt I use kosher salt
  • ¼ teaspoon cumin
  • ¼ teaspoon onion powder
  • ¼ teaspoon oregano
  • ½ cup tomato sauce
  • Topping: Pico de Gallo

Instructions

  • The first step to making these Stuffed Avocados is to season the ground beef.
  • In a container, season the ground beef with 1 teaspoon of chili powder, 1 teaspoon of garlic powder, ¼ teaspoon cumin, ¼ teaspoon onion powder, ¼ teaspoon oregano, and  1 teaspoon salt.
  • Drain any excess grease, add 1/2 cup of tomato sauce and stir to combine—Cook for about 3-5 minutes. 

Now the ground meat is ready; we can start stuffing our avocados :)

  • To prepare the avocados before stuffing them, I remove the pit from the half avocados.  I like to make a few cuts slicing the avocado; this is optional, but I have it very helpful when eating it.

How to assemble the Avocados:

  • Place a few spoons of the ground beef on top, and place the stuffed avocados on a serving plate.
  • Top with some Pico de gallo and other toppings you like. Some of my family members like to top them with some cheese and hot sauce. To give you a few ideas!

Notes

  •  To make these Stuffed avocados is to make the ground meat. I decided to use ground beef, but you can certainly use ground turkey.
  •  This ground beef is a straightforward recipe, and the best part is that you can even cook the meat ahead of time. Just place the meat in the microwave for a few minutes to warm it up and have it ready to assemble your avocados.
  • It is also fun to let your loved ones do it themselves with toppings they like. I usually have the pico de gallo at the side, some containers with cheese, jalapenos for some heat, or any other toppings you think they will like. 
  • As for the avocados, I like them just fresh like that. However, you can bake them for a few minutes or grilled them before stuffing them with the meat and pico de gallo. Either way, you decide to make these avocados will taste amazing.
