If you are looking for something light and easy to make, this is the recipe for you. This quinoa salad is made with fresh vegetables and drizzle with a lemon honey vinaigrette.

Ingredients
 
 

  • 1 cup quinoa cooked
  • 1 cup cucumbers mini
  • 1 cup raisins
  • 1 cup sweet peppers
  • 1 cup grape tomatoes
  • 1/2 cup cilantro
  • 1/2 cup red onion

Ingredients for the vinaigrette

  • 1/3 cup lemon juice
  • 1 tablespoon honey
  • 1 teaspoon salt
  • pinch black pepper
  • 1 teaspoon olive oil

Instructions
 

  • Cook quinoa. Follow the quinoa package instructions or, you can follow my simple recipe on how to cook quinoa
  • While the quinoa it’s cooking, dice all the vegetables
  • Next, combine the cooked quinoa with all diced vegetables and add some raisins.

Vinaigrette:

  • In a small container, combine the lemon juice, honey, olive oil, salt and, black pepper.
  • Drizzle the vinaigrette over the quinoa combination and refrigerate for at least half -hour . Enjoy!

Notes

This Quinoa Salad tastes even better the next day and It’s also a great recipe to make in advance to take your picnic adventures!
