This dish gives your plates of pasta a flavorful makeover. It pairs well with a side of white rice or an easy to grab option over some plantains cups as I usually serve them at home.

Ingredients

  • 20 -30 large shrimp (raw, peeled deveined, tail-on)
  • 1 teaspoon olive oil
  • salt and pepper to your taste
  • chipotle pepper in adobo sauce a tiny piece goes a long way
  • 1 ½ cups crushed tomatoes ( I use San Marzano, crushed tomatoes)
  • 1-2 cloves garlic
  • 1 medium lime
  • 1 medium white onion dice

How to Make Shrimp in a spicy chipotle Tomato Sauce

  • The first step is to defrost the shrimp by placing them in a large colander and rinse them under cool running water for about 1-2 minutes until the ice exterior is removed. Make sure to shake the colander to remove any excess water.
  • Then, place the shrimp in a large container and season with salt,  pepper to your taste. Then add the juice of one lime, and toss to combine. Set aside and let us prepare the sauce.
  • Using a blender, combine about 1 ½ crushed tomatoes, 1-2 garlic cloves, and the delicious secret ingredient, a small piece of chipotle pepper. Just remember, this goes a long way in flavor. Blend and set aside.

Let us combine Shrimp with Sauce:

  • In a large non-stick skillet, add one teaspoon of oil. Continue by sauteing the onions for 2 minutes or until they look translucent. Then, add the shrimp and cook for about 2 minutes on each side.
  • Add the tomato sauce mixture, stir to combine, and let it cook for about 5 minutes. Garnish with some green onions, and enjoy!
