How to make this Easy Vegetarian Sweet Potato Black Bean Chili Recipe.

  • One of the ingredients I love the most to make my recipes is garlic. I love garlic for many reasons including is great for your health. I like to combine the garlic cloves with a pinch of salt and ½ teaspoon of black pepper and create a flavorful garlic paste. That’s what I did first.
  • Then, saute 1 cup of chopped onions in a large pot over medium-low heat with 1 teaspoon of oil. and add the garlic paste and the green peppers.
  • Then, add 1 (15 oz) can of black beans (rinsed and drained), 1 (28oz) can of crushed tomatoes, and 1-2 chipotle peppers, I added two. These peppers add a very distinctive smoky flavor to the chili. Stir and cook for 1 minute.
  • Proceed to add 2 cups of sweet potatoes (peeled and chopped) and 1 cup of quinoa. Next, add 1 teaspoon of salt, 1 teaspoon ground oregano, 1 teaspoon of chili powder, 1 teaspoon garlic powder, ½ teaspoon cumin, and 1-2 stem cilantro. Stir and cook for a minute to release the flavors.
  • Next, pour 3 cups of water and increase the temperature to medium-high, and let it come to a boil. Reduce the heat to medium-low and cover the pot. Let it simmer for at least 30 minutes stirring occasionally. Add a little bit of water if is too dry for your taste. For me, 3 cups of water were enough.
  • Now its time to enjoy :)
