Ingredients

  • 1 cup butter melted and cooled
  • 2 tablespoons oil I use olive oil extra light for baking
  • 1 cup brown sugar
  • 1 cup white sugar
  • 4 large eggs room temperature
  • 4 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon salt I use sea salt
  • 1 ½ cups roughly chopped chocolate or large chocolate chips

Pumpkin Mixture:

  • ½ cup cream cheese at room temperature
  • 1 cup pumpkin puree
  • 2 tablespoons white sugar

HOW TO MAKE PUMPKIN BROWNIES

  • The first step is to preheat the oven to 350°F and line a 7×11-inch baking pan with parchment paper. Set aside
  • Next, in a large bowl, combine melted butter, oil, and both sugars, Then add eggs, vanilla, and salt. Whisk until fully incorporated.
  • Sift in the flour and cocoa powder. Gently mix until all is well combined. until the batter is smooth and free of lumps
  • Add the chocolate chunks and chocolate chips and using a spatula fold them in until all is well coated and combined. Pour the batter into the baking tray and set aside.
  • In a separate mixing bowl, combine the cream cheese, sugar, and pumpkin puree, and mix until smooth and combined. The addition of pumpkin puree makes these brownies extra moist and deliciously chewy.
  • Gradually pour the cream cheese pumpkin filling over the brownie batter. Use the bottom of a spoon to swirl it in, or drag the tip of a knife through the batter to create a swirl pattern.
  • Bake for 35–40 minutes, until the center of the brownie no longer jiggles. Allow it to cool at room temperature before serving.
