Ingredients

  • 1 pound chicken cutlets
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1/2 cup mushrooms
  • 1/2 cup grape tomato
  • 1/3 cup white wine

Instructions

  • First,  season the chicken cutlets with salt and pepper
  • In a nonstick pan,  place your oil on medium high heat ( I am using olive oil for grilling and sautéing)
  • Place the chicken cutlets in the pan and let the meat sear for about 3 to 5 minutes each side or until a light golden color. If you are using chicken with skin always place skin side down first
  • after browning, set chicken aside so that we can begin  to make our sauce

Now let's make the sauce

  • With your pan on low heat, we start by melting the butter and with a wooden spoon scraping the brown bits of flavor off the pan
  • Next, add the mushroom, white wine or water and add the chicken breast and some grape tomatoes.
  •   lastly,  cook for about 10 minutes on low heat. It's that simple!

Notes

  • A low heat prevents the liquids from evaporating too fast
  • I like to buy the boneless chicken breast pkg and cut them into thin slices myself. it's a great way to save money!
  • I like to use kosher salt
  • You can substitute the white wine with sherry wine, white grape juice, or even water
