First, season the chicken cutlets with salt and pepper
In a nonstick pan, place your oil on medium high heat ( I am using olive oil for grilling and sautéing)
Place the chicken cutlets in the pan and let the meat sear for about 3 to 5 minutes each side or until a light golden color. If you are using chicken with skin always place skin side down first
after browning, set chicken aside so that we can begin to make our sauce
Now let's make the sauce
With your pan on low heat, we start by melting the butter and with a wooden spoon scraping the brown bits of flavor off the pan
Next, add the mushroom, white wine or water and add the chicken breast and some grape tomatoes.
lastly, cook for about 10 minutes on low heat. It's that simple!
Notes
A low heat prevents the liquids from evaporating too fast
I like to buy the boneless chicken breast pkg and cut them into thin slices myself. it's a great way to save money!
I like to use kosher salt
You can substitute the white wine with sherry wine, white grape juice, or even water
