Orange Glazed Chicken Thighs

I am happy to share one of my favorite chicken thigh recipes with you - Orange Glazed Chicken Thighs. These chicken thighs are perfect for a quick and easy weeknight dinner or as a meal prep for lunch. This chicken dish is a great option if you need a last-minute dinner idea!

Ingredients

  • 5-8 boneless chicken thighs
  • 1 teaspoon oil I use avocado oil
  • 2 tablespoons unsalted butter

For the marinade:

  • 1 red onion finely chopped
  • 2-3 small sweet peppers or any peppers of your preference chopped
  • bunch of parsley chopped
  • 1 tablespoon garlic powder
  • 1 ½ tablespoons paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon
  • 3 oranges
  • 8 tablespoons honey

Instructions

  • Start by finely chopping onion and peppers. Place them in a mixing bowl and sprinkle with chopped parsley. Add 1 1/2 tablespoons of paprika, 1 tablespoon of garlic powder, 1/2 teaspoon of black pepper, and 1 teaspoon of salt. Squeeze the juice of one lemon and three oranges and pour it into the mixture. Stir everything together well.
  • Divide the mixture into two parts. One part is for marinating the chicken. Place the chicken thighs in the mixture, cover it, and put it in the refrigerator to marinate for at least 20 to 30 minutes. For the other part of the mixture, add honey and set it aside.
  • Once the chicken has marinated, it's time to sear and cook it. Heat a skillet over medium heat and add oil (I use avocado oil) and unsalted butter. Place the marinated chicken thighs (just chicken) in the skillet and sear it for 3-4 minutes per side or until it turns golden brown. Remove the chicken from the skillet and set it aside.
  • In the same skillet, add the remaining marinated chicken. Cook it for 2 minutes, then return the other chicken to the skillet. Add the marinade with honey and let it cook for 10-15 minutes, or until the marinade has thickened into a delicious glaze.
  • Serve and enjoy!
