MIXED BERRY CREAM CHEESE DANISH

Ingredients

  • 1 box puff pastry sheets the package brings two sheets

Cream Cheese Filling:

  • 8 oz. cream cheese softened
  • 1 lemon I use the zest of the entire lemon and half of the juice.
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract

Fruit mixture:

  • 1 ½ cups mixed fruits strawberries, blueberries, and blackberries
  • 1 teaspoon cornstarch
  • 2 tablespoons granulated sugar

Garnish:

  • Mint leaves
  • Powdered sugar

Instructions

How to Make Mixed Berry Cream Cheese Danish:

  • The first step is to thaw puff pastry according to the package instructions. Preheat the oven to 400˚F with a rack in the center.

To make the cream cheese filling:

  • In a bowl, mix together the softened cream cheese, sugar, vanilla extracts, lemon zest, and lemon juice until smooth. Start off with a fork to loosen up the mixture then switch to a whisk to remove any lumps. Set aside.

Fruit Mixture:

  • In a separate bowl, add mixed berries, sugar, and cornstarch. Combine and set aside. I used a combination of strawberries, blueberries, and blackberries. You can use any combination you desire. I wash my fruits with some vinegar and rinse well. I cut the strawberries into bite sizes and I pat dry all the fruits to remove excess water.

Assembly and Bake:

  • Next, gently unfold your puff pastry and lay it flat over the parchment paper on baking tray. Then, Use a pizza cutter to shape the puff pastry. I opted for squares and it turned out absolutely perfect!
  • Make sure they’re evenly spaced apart. Use a knife or pizza cutter to score a border around the outside. This allows the edges to rise to contain the filling. Don’t cut all the way through, but just enough to leave behind a clear border. This method is foolproof and guarantees that you’ll be thrilled with the end result.
  • Transfer the parchment sheet with the pastry dough onto a baking tray. Scoop 1 tablespoon of the cream cheese filling into the center of each pastry and spread the filling within the border using the back of a spoon. Place the fruits on top of the cream cheese.
  • Prepare a simple egg wash by whisking together the egg with 2 teaspoons of milk or water. Then, use a pastry brush and lightly brush the edges of the pastry with egg wash. This helps the edges turn golden brown and glossy once baked.
  • Bake the pastries for 18 to 20 minutes, until they’re golden brown. Remove them from the oven, and transfer them to a rack.
