Homemade Apple Cider

Ingredients

  • 8-10 large apples quartered (no need to peel)
  • 1 orange halved
  • 3 cinnamon sticks or 1 tablespoon ground cinnamon
  • 1 teaspoon whole cloves or 1/2 teaspoon ground cloves
  • 1 teaspoon whole allspice
  • 1 whole nutmeg
  • 1/2 cup packed brown sugar
  • 10 to 11 cups water

Instructions

  • In a large pot, over medium heat, add apples, oranges, spices, and brown sugar. Cover with water. Bring to a boil, uncovered, for 1 hour. Then reduce the heat and simmer, covered, for 2 hours. The liquid should begin to turn amber in color when it's done. Add more sugar and water as needed. Just make sure the water is hot.
  • Next, using a fine mesh sieve, strain your cider into a big bowl. Press on the solids with a wooden spoon to squeeze all the juices out. Discard the whole spice. Your mixture will be concentrated, so you can adjust to your taste with more boiling hot water. I like it concentrated. Serve apple cider warm.

Notes

Storing Apple Cider:

Apple cider will be kept in the refrigerator for two weeks. Allow it to cool completely before placing it in an airtight container and placing it in the refrigerator.
