If you have ever been hesitant to make a homemade roasted chicken, this recipe is for you. This Roast Chicken is seasoned with a combination of herbs and butter and then roasted to perfection. It's easy and simple to make.
The first thing I do is clean ( remove giblets for the inside of the chicken's cavity and pat dry the chicken.
Then, I combine the garlic, a small habanero pepper (optional), salt, and pepper, using a mortar and pestle. This will create a garlic paste that makes this chicken taste divine.
Mix the melted butter, cilantro, lime juice, and garlic paste. Drizzle 1 teaspoon of olive oil and season with salt and back pepper.
Place the chicken inside an oven-safe bag, tide up the bag. Gently, using a knife, cut a small opening on the bag. I love using these oven-safe bags to save some cooking time. Then, place the chicken in a roasting pan and cook for about 20- 25 minutes.
Then, safely remove the bag and continue cooking the chicken for 10-15 minutes (depending on the size of the chicken) over high temperatures (I raised mine to 475 degrees) until the chicken turns golden brown.
