Easy Bruschetta Recipe

I love Bruschetta. I love it so much that I decided to not only enjoy it when I am at a restaurant but also in the comfort of my home. Just think about this; Toasted bread topped with creamy burrata cheese and a flavorful roasted tomatoes and garlic combo that will leave you asking for more.

Ingredients

  • 4 rolls of ciabatta bread (sliced in halves)
  • 3 cloves garlic (peeled and minced)
  • 1/3 cup extra virgin olive oil
  • 2 teaspoons Italian seasoning
  • 1 8.8 oz (250g )Burrata Cheese
  • 1 10oz Package Grape tomatoes
  • basil for garnish
  • sea salt to taste

Instructions

  • Preheat the oven to 350 °F.
  • In a baking dish, add the diced tomatoes and toss with garlic, spices, and olive oil.
  • Then, place it in the oven for about 10 minutes. Roast them for about 15 minutes or so until most of the moisture has evaporated and they start to caramelize at the edges.
  • In the meantime, toast the bread. Toast the bread slices until they are golden brown.
  • Spread some of the creamy burrata cheese on each slice of bread.
  • Next, add the roasted, marinated tomatoes on top of the cheese.
  • Sprinkle a few pinches of flaky sea salt and chopped fresh basil leaves on top.
  • Finally, finish off with a drizzle of balsamic and serve the dish immediately. Enjoy!
