Ingredients

  • 1 ½ pound of baby potatoes (halved)
  • ¼ cup olive oil
  • 2-3 cloves of garlic (minced)
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried Italian seasoning
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons fresh parsley (chopped)

Instructions

The secret to these deliciously crispy roasted potatoes is to parboil them. Par Boiling the potatoes softens the outer layer sufficiently to roughen it up, resulting in the greatest crisping texture. So let’s start the recipe by doing that!

  • The first step is to cut the potatoes in half. In a large pot, add the potatoes. Then, bring enough water to cover the potatoes, season with a pinch of salt, and cook for 5-7 minutes.
  • Preheat the oven to 400 degrees Fahrenheit.
  • The next step is to drain it in a strainer and leave it dry. Once dry, add the olive oil, minced garlic, salt, pepper, Italian seasoning, and parmesan cheese.
  • Toss to coat evenly and line them on a sheet pan. Spread the potatoes in a single layer.
  • Bake the potatoes for 35-40 minutes or until golden brown and tender at the touch of a fork.
  • Transfer to a serving plate, garnish with some parsley, and enjoy!
