Equipment

  • To make the brine for chicken, you will need a large pot.

Ingredients

  • 8 to 10 cups water cold tap water
  • 1 tablespoon kosher or cooking salt avoid table salt as is too salty.
  • 1 lemon cut into wedges
  • 10 sprigs parsley fresh
  • 5 sprigs thyme
  • 2 sprigs rosemary
  • 5 bay leaves fresh or dried
  • 6 cloves garlic smashed
  • 1 tablespoon black peppercorns

Instructions

  • First, pour half of the water into the pot. Then add peppercorns, fresh thyme, rosemary, sage, bay leaves, parsley, lemon wedges, and cloves of garlic peeled and slightly smashed. Add salt and bring to boil for 5 minutes. This will help release the flavors of other herbs and spices as well as dissolve salt.
  • Remove the pot from heat and carefully pour in the remaining fresh water. Allow the solution to cool completely before use. My recommendation is to cool it for at least 30 minutes before refrigerating. Keep in the fridge for at least an hour. Do not put the chicken in the pot until the brine mixture is fully cooled to avoid any health hazards.
  • After 30 minutes add a whole chicken to the brine, and cover the pot. Keep it in the fridge for at least an hour. Do not put the chicken in the pot until the brine mixture is fully cooled to avoid any health hazards.
