Air Fryer Parmesan Fingerling Potatoes and Asparagus

This is one of the best ways to make Asparagus and fingerling Potatoes together in the air fryer, with both coming out perfectly crispy and tender simultaneously. This yummy, vibrant side dish is gorgeous enough for your holiday table but simple enough to put together in less than 30 minutes. you’ll be rewarded with the bright, fresh flavors and textures of the finished dish.

Ingredients

  • Asparagus
  • Fingerling potatoes
  • 1 tablespoon Olive oil
  • 1 tablespoon Paprika
  • 1 tablespoon Garlic powder
  • 1 teaspoon Oregano
  • 1 teaspoon Thyme
  • ½ cup Parmesan Cheese
  • 1 Lemon zest and juice

Instructions

  • Preheat your air fryer to 400°F (200°C). If your air fryer requires preheating, be sure to follow the manufacturer’s instructions for the best results.
  • Prepare the vegetables: The first step is to wash and slice the fingerling potatoes. As for the Asparagus, trim asparagus stalks about 2-3 inches from the bottom.
  • Season: In a large bowl, toss the halved fingerling potatoes and the asparagus with paprika, oregano, thyme, garlic powder, and olive oil. Make sure each piece is well-coated. If is your preference season the potatoes and asparagus separately.
  • Air Fry the potatoes: place the seasoned potatoes in the air fryer basket in a single layer. Cook for about 15 minutes, shaking the basket halfway through to ensure even cooking.
  • Add asparagus to the air fryer. After the potatoes have cooked for 15 minutes, add the asparagus to the basket and cook for an additional 5-7 minutes or until the asparagus is tender, and the potatoes are golden brown and crispy.
  • Transfer the potatoes and asparagus to a serving dish and garnish with some parmesan cheese and lemon juice. Serve immediately and enjoy the burst of flavors and texture. They pair nicely with my Sausage, peppers, and onions recipe.
