Ingredients

  • 1 rack baby back ribs
  • 2 tablespoon smoked paprika
  • 2 tablespoon black pepper
  • 2 tablespoon salt kosher
  • 1 teaspoon oregano
  • cup brown sugar
  • 2 tablespoon garlic powder
  • 1 teaspoon cayenne pepper (or chili pepper) optional
  • 1/3 cup water for the pressure cooker
  • BBQ Sauce of your preference

Instructions

  • The first step is to combine smoked paprika, cayenne pepper(or chili pepper), black pepper, salt, oregano, brown sugar, and garlic powder.
  • The second step is to sprinkle half the dry rub over both sides of the ribs and spread using your hands. If you feel more comfortable use gloves.
  • The third step after the rack is all coated with the rub place it inside the pressure cooker (instant pot). Add a little bit of water seal and cook for 30 minutes on high pressure.
  • The fourth Step, after 30 minutes safely remove the rib rack from the pressure cooker and place them in a baking sheet. Add the rest of the rub and oven-bake them for about 30 to 40 minutes over 425 degrees Fahrenheit.
  • Lastly, take the ribs out of the oven and coat them with your favorite BBQ sauce. Place them in the oven again and cook for 10 more minutes until golden brown.

Notes

Tips:
It is extremely essential to remove the paper-like membrane from the back of the rib rack. This membrane is very tough and it will prevent the rib from being tender. I suggest not to skip this step. If you want to know the simple steps to remove this membrane go to my How to remove the membrane from Baby Back Pork Ribs.
They are seasoned to perfection with a dry rub and then tenderized in a pressure cooker before going into the oven. You can easily avoid the oven and place them in a grill. To make very tender baby back ribs it usually takes at least 24 hours of slow cooking, but using a pressure cooker for 30 minutes will reduce the time to just an hour of cooking in the oven.
