This Chayote recipe is a favorite in my household. It pairs perfectly with fluffy white rice making it simply satisfying! If you are already familiar with Chayotes you are going to love this version of making it.
I started making this chayote Recipe about 20 years ago with the intention of creating delicious recipes for my two vegetarian children. Even now as adults, they enjoy this recipe. This sofrito gives the chayotes a delightful flavor making it a very tasty dish.
What is a Chayote:
Chayote is a light green, pear-like fruit and it has a mild flavor. Although the Chayote is a fruit, it is very much considered by Latin cuisine as a vegetable. It is cooked and used in salads. Before I introduce to you this recipe, let me share one important tip about how to peel the chayotes.
How to peel Chayotes:
I have to be honest with you. I love making this recipe but one thing that always bothered me when I first started making this was peeling the Chayotes. My hands use to get so sticky and dry that not even washing my hands would remove it. The good news is that I found the perfect way to peel them. The trick is to add oil to your hands before peeling them. I suggest covering your whole hands with cooking oil. However, if you don’t want to go to all this trouble just use gloves of course.
Ingredients you” ll need :
- 3 to 4 chayotes (peel and dice)
- olive oil
- 1 or 2 tablespoons of my Sofrito with Chipotle Peppers
- Jalapenos(optional) or any other pepper of your preference.
How to make Chayote In Chipotle Tomato Sauce:
Peel the chayote ( read my tips on how to peel them). Next, place in a pot with enough water
Cook on the stove over medium-high heat for about 20 minutes or until soft. Then, mash the chayote to your desired texture.
Add one or two tablespoons of the chipotle seasoning (Homemade Sofrito), a few jalapeno slices (optional), tomato sauce, and salt to taste. I also added an extra 1/2 teaspoon of oil (optional).
I make this Chayote recipe at least twice a week. It is a favorite in my household.
This is a recipe I have been cooking for years for my two kids that are vegetarian. We like to serve it over white rice for a satisfying dinner option.
