The Ultimate Loaded Potato Soup

We love soups. Soups are perfect for staying warm inside when it’s cold outside. I have shared a few soup recipes here on the blog. At the beginning of my journey as a food blogger, I decided to share my Spanish-style Beef Soup with you, which is one of the most requested in my household. I also shared my mom’s and my son’s favorite Tomato Soup. Today I’m making one of my favorite soups: Loaded Potato Soup.

This potato soup is the perfect way to relax after a long day. It’s perfectly rich and creamy.

What You Need To Make The Ultimate Loaded Potato Soup Recipe

Potato-Soup-Ingredients
  • Russet Potatoes
  • Cheddar Cheese
  • Olive oil
  • White onion
  • Celery
  • Chicken or vegetable broth
  • Salt & Pepper
  • Bacon (optional)

How to Make Potato Soup

Step 1: In a large pot over medium-high heat, add 1 teaspoon of oil and saute the chopped onion, garlic, and celery. Stirring occasionally, until translucent ( about 4 minutes).

 Step 2: Proceed to add chicken or vegetable broth (low sodium), peel chop potatoes, salt, black pepper and bring to a boil. Reduce the heat and simmer, covered, until the potatoes are tender, 15 to 20 minutes.

Step 3: Remove the potatoes from the stove, and carefully puree them (including all liquids) in an immersion blender or food processor. 

Step 4: Return the creamy puree back into the pan and over low heat, add the cheese and stir until melted. Remove the pan from the heat. Taste the soup and add more salt if needed. Serve the soup topped with bacon and chives.

This easy-to-make soup is incredibly comforting, creamy, and cheesy. I hope this soup becomes a favorite of yours!

Ingredients

  • 2 pounds russet potatoes about 4 potatoes
  • 1 cup cheddar cheese grated
  • 1 teaspoon olive oil
  • 1 medium white onion chopped
  • 1-2 sticks celery chopped
  • 4 cups chicken or vegetable broth low sodium
  • Salt & Pepper to taste
  • Bacon optional ( I use 5 slices)
