This salad is so refreshing, flavorful and full of colors which makes it great to make at any time or any occasion.

Salads are always part of the weekly menu in my household and this Kale Pomegranate Salad is one of my favorites. The burst of flavors from the pomegranate seeds and the crunchiness from the apples and the nuts makes this one a hard one to resist.

How to make this healthy salad:

The first step is to wash, clean and massaged the kale. Kale has sturdy leaves and giving a massaged with a little bit of oil helps soften it up. Then remove all the stems from the kale.

Proceed to remove all the seeds from the pomegranate. I have to advise you to resist the temptation of eating all the seeds from the pomegranate, they are so refreshing but keep in mind you need them for the salad!

Then, dice all the ingredients and add them to the already massaged kale🙂 Add your favorite dressing or my refreshing pomegranate vinaigrette that goes well with this salad. I saved some of the juice from the fresh pomegranate fruit to make the Pomegranate Vinaigrette

Tips and tricks

  • Raw kale can be a little bit intimidating for some people because of its tough texture but giving a massaged will not only soften the kale but it makes it easier to digest.
  • You can also chop the kale, add the dressing and let the kale soaked all those wonderful flavors of the pomegranate vinaigrette. This will allow the kale to tenderize before you add the rest of the ingredients.

Ingredients

  • 1 bunch kale
  • 1/2 cup grape tomatoes (diced)
  • 1 apple (diced)
  • 1 cup fresh pomegranate seeds
  • 1/2 cup nuts (I use pecans)
  • 1 cup peach (diced)
  • 1 cup dried sweetened cranberries
