This Caprese Chicken Recipe will make your chicken breast more flavorful and exciting than it has ever been! You simply won’t believe how easy it is to put together. It’s everything you love about caprese salad, but transformed into a whole meal that’s sure to satisfy your hunger. It’s elegant enough for entertaining but simple enough for a family weeknight meal.
The Best Caprese Chicken Recipe
Caprese recipes are my absolute favorites. Especially during the warmer months, when I’m trying to make the most of the vegetables available to me thanks to the abundance of farmers in my area. Caprese chicken, which is also just called “chicken caprese,” is a chicken dish that is based on Italian food and is made with tomatoes, fresh mozzarella, herbs, olive oil, and vinegar.
This recipe for caprese chicken is going to quickly become a new staple in your dinner rotation. The chicken is oven-baked; however, this recipe works great on the grill or on the stovetop.
This Caprese chicken gets it’s signature sweet-and-tangy flavor from the reduced balsamic vinegar or balsamic glaze.
HOW TO MAKE CAPRESE CHICKEN:
The first step to make this caprese stuffed balsamic chicken is to cut and season the chicken breast. To cut the chicken’s pockets, you’ll need a sharp, thin-bladed knife. Then start at the thickest part of the breast and work your way in. Just watch that you don’t cut all the way through.
Season both sides of the chicken breast. I’m using a salt, pepper, and garlic seasoning blend called Kinder’s that I found on Amazon. This combination is fantastic. I use it to make these delicious Juicy Pork Chops. You can, however, use garlic powder, salt, and pepper separately. I also added smoked paprika and oregano.
Stuff each chicken breast with 2 slices of fresh tomato, fancy pimientos (which are delicious), 2 teaspoons of sun-dried tomato strips, one or two slices of mozzarella cheese, and basil leaves.
Fold in all really tight or if you want you can seal with 3-4 toothpicks diagonally to keep the filling inside while cooking. In my case, I didn’t find that necessary as I don’t mind the cheese picking out while cooking.
let’s prepare the balsamic sauce:
Mix together the garlic, balsamic vinegar, and brown sugar in a small jug and set aside.
Then, pan-seared the chicken breast. In an oven-safe skillet heat 1 teaspoon of oil over medium-high heat. Once the oil is hot carefully place the chicken in the pan. Then, cook the chicken on each side for 3 minutes or until browned.
Pour the balsamic mixture into the pan around the chicken; bring to a simmer while stirring occasionally, until the glaze has slightly thickened (about 2-3 minutes).
Transfer to the preheated oven, and bake for 10-15 minutes, until the chicken is cooked through reaching an internal temperature reaches 165°F (74°C). Check if you’ve reached these temperatures by putting a meat thermometer in the thickest part of the breast.
