Spaghetti with Fire Roasted Crushed Tomato Sauce
The spaghetti is combined with mushrooms, grape tomatoes, garlic, green onion, and cilantro. Then it is tossed in a fire-roasted crushed tomato sauce that is packed with smoky flavors. I love the combination of these vegetables. However, you can make it with yellow squash, zucchini, and broccoli which are great choices as well. I have done so many versions of this easy spaghetti recipe over the years and every time is a success in my household. Just have fun with it, I’m certain this spaghetti with fire-roasted crushed tomato sauce will please the whole family!
Ingredients you’ll need:
- Spaghetti
- Olive oil
- Small tomatoes
- Cilantro
- Onion
- Mushroom
- Garlic
- Salt and pepper
- Dry oregano
- Dry parsley
- Fire-roasted crush tomatoes
- Marinara sauce
How to make this easy pasta recipe:
In a large pot boil enough water to cook spaghetti. For this recipe, I used gluten-free organic spaghetti but regular spaghetti works as well. While the pasta is cooking, place a large skillet on the stove over medium-high heat and add some oil. Proceed to add the mushroom, onions, tomatoes and stir for about 1 minute.
Next, add salt, black pepper dry oregano and parsley. Then, add marinara sauce and crushed tomatoes and some of the water of the boiling spaghetti( about a ⅓ cup). Let the sauce cook for about 5 minutes and proceed to add pasta (make sure to drain it first).

- 1 pkg 12 oz (340g) spaghetti
- 2 tablespoon olive oil
- 1 cup tomatoes
- a handful of cilantro
- 1 large red onion (diced)
- 1 cup mushroom (diced)
- 2 garlic cloves
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- some dry or fresh parsley
- 1 cup tomatoes fire-roasted crushed (canned)
- ½ cup marinara sauce (any of your preference)
- ⅓ cup water I saved the water from the spaghetti after draining it. It has more flavor
Instructions
- In a large pot boil enough water to cook spaghetti. For this recipe, I used gluten-free organic spaghetti but regular spaghetti works as well.

- Cook over medium heat for about 15 minutes and Enjoy!
Notes
- Just have fun with it, use as many varieties of vegetables as you like and please share with me those creations, there might be one I have not tried it yet 🙂
- For this recipe, I used gluten-free organic spaghetti for this recipe but regular spaghetti works fine
- I used about a ⅓ cup of the water of the spaghetti, after it is drained, to make the sauce
