Today I’m sharing my go-to Butternut Squash Recipe. It’s easy, simple, and delicious. This Simple Roasted Butternut Squash Recipe is perfect as a side dish or just toss them into a bowl of salad; Simple and Delish.
These bite-sized pieces of butternut squash are baked and seasoned with the right amount of light brown sugar, ground nutmeg, and cinnamon. Then drizzled with some maple syrup and avocado oil. This butternut squash recipe is the perfect side dish to serve during the coming holidays.
It’s the ideal vegetarian dish packed with amazing flavors.
Ingredients you’ll need:
- Butternut Squash
- Light brown sugar
- Maple syrup
- Avocado oil
- Ground cinnamon
- Ground nutmeg
How to make This Simple Roasted Butternut Squash:
Preheat oven to 400°F.
The most difficult part of making this Roasted Butternut squash is to peel the squash. The first thing I do is to cut the two ends of the vegetable. then with a sharp knife or vegetable peeler, work downwards peeling off long strips. Then, proceed to cut in the center of the squash.
One of the sides has all the seeds. Using a spoon, scoop out the seeds and discard.
Then, roughly cut the butternut squash into small bite pieces.
Place the butternut squash into a mixing bowl and add 2 tablespoons of light brown sugar, 1 teaspoon ground nutmeg, 1 teaspoon cinnamon, 1 tablespoon avocado oil, 2 tablespoons of maple syrup, salt, and black pepper to taste. Stir to combine until all pieces are well coated.
Place the butternut squash on a baking sheet and place it in the oven for 20-30 minutes or until the squash is tender. Make sure to leave space between them, this way the squash will get nicely crisp.
