This Scrambled Egg Whites Over Avocado Toast is one of my favorites breakfasts. These fluffy soft egg whites are scrambled with a combination of crunchy veggies and then served over a whole grain avocado toast. This dish is perfect for your easy, peasy, and healthy weekday breakfast.

Have you ever wondered what to do when a recipe calls for egg yolks only? Do you ask yourself, “What should I do with the egg white? should I discard them?” Wonder no more!

One of the many use for egg whites is to scramble them. Egg Whites have lots of nutritional benefits. Did you know that the vast majority of protein content is in the egg whites?  It also contains essential minerals vital for our general health, such as Potassium(54 milligrams). Egg whites are also perfect for high cholesterol issues as they have No Saturated fat (bad fat).  I hope these facts are helpful to you 🙂 One of my favorite ways to use egg whites is by making a deliciously satisfying breakfast option, Scrambled Egg Whites Over Avocado Toast.

What I love about this Scrambled Egg Whites Recipe is that it is packed with lots of flavors.  The egg whites are combined with plum tomatoes, red, yellow, and orange peppers that provided a great source of vitamin C, red onions, and some cilantro. Another ingredient I like to add is Jalapeño peppers for a nice kick. I love spicy food, so adding something spicy is a must for me. I use two jalapenos in this recipe but feel free to omit them or use them at your own discretion. TIP: If you like your eggs very spicy,  leave the seeds on the pepper; if not, remove the jalapeno inside for a more mild taste.

How to serve these Scrambled Egg Whites:

 I want to take this scrambled egg whites recipe to the next level by serving it over a slice of whole-grain bread. I mashed some avocado slices, seasoned with lime juice( great to prevent the avocado from turning black), and a pinch of salt. Spread the avocado over the toast and add the scrambled egg whites on top. It is honestly delicious!

Ingredients

  • 4 large eggs whites
  • 1 ½ cup pepper red, orange, and yellow peppers finely chopped
  • 1 cup plum tomatoes finely chopped
  • cup onions red finely chopped
  • 1 small jalapeno pepper finely chopped (optional)
  • 1 tablespoon olive oil
  • ½ small avocado mashed
  • ½ small lime
  • cilantro garnish
  • salt and pepper to taste
  • whole-grain bread or any bread of your choice

Instructions

How to make Scrambled Egg Whites over Avocado Toast:

  • Chop the peppers, tomatoes, cilantro and, red onion.
  • Then, in a mixing bowl, whisk the egg whites and add the onions, peppers, ¼ teaspoon salt (I use sea salt in this recipe)and, a pinch of black pepper.
  • Next, In a nonstick skillet, add the oil and place it on the stove over medium-high heat. When the oil is hot, pour the egg white mixture.- Cook for about one minute without stirring it.
  • Lastly, begin to stir until all is well combined. Reduce heat to a low setting and keep cooking for about 3 to 4 minutes. Serve over avocado toast.
