If you are looking for the best side dish to balance out your dinner, this is it 🙂 These Roasted Carrots are oven-roasted to perfection to bring out their natural sweetness. Oh, wait, it doesn’t end there. They are tossed with a delicious homemade sauce that compliments them, making them irresistible.
I love vegetables, especially Carrots. This is a vegetable that is healthy and so versatile. You can eat it raw, in your soups and stews, or one of my favorite ways, adding it to my morning juice. Another amazing way to enjoy carrots is by roasting them.

If you don’t know about Farmbox Direct, this company delivers fresh fruits and vegetables to your door. In this recipe, I use fresh carrots that were delivered to me by Farmbox Direct. I have to be honest, and this is my first time using this delivery service. I have to say it is very convenient to have vegetables and fruits delivered to your doorsteps. The products are carefully packed and protected by paper-like padding to protect them from damage and maintain their freshness, and in my opinion, they accomplish that. All the vegetables and fruits in my box were deliciously fresh.
I used each one of the vegetables and fruits that came in my box. I have to say my favorite one was these carrots. As soon as I opened my box, they catch my attention, and I knew I had to roast them.
How to make these Roasted Carrots:
The first step is to preheat the oven to 400 °F. Then, wash, peel, and slice your carrots to about ½ inch on a diagonal size.
Then place the carrots in a large sheet pan and drizzle oil, crushed red peppers, and season with salt and pepper to taste. Next, place in the oven and roast for about 15-20 minutes or until they are caramelized and tender.
While the carrots are cooking in the oven, let us prepare the sauce:
In a small bowl, combine 1 tablespoon of unsalted butter (melted), 1 tablespoon honey, ¼ teaspoon nutmeg, ½ teaspoon cinnamon
Remove the carrots from the oven, transfer them into a small bowl, and toss them with the honey sauce.
The carrots are sweet, crunchy, slightly spicy, and amazingly delicious. They are the perfect side dish for all time!
