Pan-seared Quick and Easy Chicken Cutlets

If after a long tiring and busy day, you are debating whether you should cook or just go for takeout, don’t think twice. This Pan-seared Quick and Easy Chicken Cutlets will help you make up your mind!

Pan-seared Chicken Cutlets

These pan-seared quick and easy chicken cutlets are full of flavor. It has an earthy taste from the mushrooms which I love. This is such a great choice for meal planning, a busy day and any other occasion where you just looking for a fuss-free recipe!

First,  season the chicken cutlets with salt and pepper. Then, in a nonstick pan,  place the oil on medium-high heat ( I am using olive oil for grilling and sautéing). Proceed to place the chicken cutlets in the pan and let the meat sear for about 3 to 5 minutes each side or until a light golden color. If you are using chicken with skin always place the skin side down first. After browning, set chicken aside so that you can begin to make our sauce.

Now let’s make the sauce:

  1. With your pan on low heat, we start by melting the butter and with a wooden spoon scraping the brown bits of flavor off the pan

  2. Next, add the mushroom, white wine or water and add the chicken breast and some grape tomatoes.

  3.   lastly,  cook for about 10 minutes on low heat.

Ingredients

  • 1 pound chicken cutlets
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1/2 cup mushrooms
  • 1/2 cup grape tomato
  • 1/3 cup white wine

Notes

  • A low heat prevents the liquids from evaporating too fast
  • I like to buy the boneless chicken breast pkg and cut them into thin slices myself. it's a great way to save money!
  • I like to use kosher salt
  • You can substitute the white wine with sherry wine, white grape juice, or even water
