The wings are crispy without the mess of frying!

If you want crispy wings, it’s important to remove moisture from the chicken wings. Here are two simple techniques I use:

First, to eliminate excess moisture, it is advisable to refrigerate the wings for at least an hour. However, if time is limited, you can dry them by patting and applying aluminum-free baking powder as I did.

How to make Crispy Oven-Baked Chicken Wings:

Let’s prepare the wings:
Start by cutting them into drumettes and wingettes. Use a sharp knife to cut them at the joint and remove the tips. If you prefer, you can buy pre-cut “party wings” at the store to save time and effort. When planning for this meal, my recommendation is to prepare approximately one pound of bone-in wings per person.
Next, pat the wings dry with a paper towel to remove excess moisture.

Add the wings to a large bowl or a Ziploc bag and sprinkle the baking powder all over the wings. Make sure you get aluminum-free baking powder. Set the chicken wings on a metal rack and let them air-dry for a couple of minutes.

Preheat the oven to 375 degrees Fahrenheit.

Then, place the wings back in a large bowl and add spices. Toss them to coat them evenly.

Place the wings in a single layer on a baking sheet with a wire rack. I recommended lining the sheet with either aluminum or parchment paper for easy clean-up.

Bake the chicken wings until browned, about 45 minutes. While the wings are baking, let’s move on to the sauce!

Homemade BBQ Sauce

In a small saucepan, combine ketchup and honey, apple cider vinegar, Worcestershire sauce, onion powder, garlic powder, kosher salt, cayenne pepper, or Sriracha hot sauce (optional), and stir to combine. Bring to a boil over medium heat. Reduce the heat to low and simmer, stirring often, until slightly thickened 7 to 10 minutes.
