I’m a big fan of mini single-serve desserts like this mini pumpkin cheesecake I shared with you last year. Today I’m bringing you these tiny pumpkin pie bites.

These pumpkin pie bites are easy to eat without having to clean your dishes afterward. No plates, no forks. Just grab it and enjoy! You can send these as a snack for your kids or put them in a small box and send them to someone you care about.

How to make these Mini Pumpkin Pie Bites:

Step#1: Preheat the oven to 350 degrees Fahrenheit. Grease with non-stick cooking spray a mini muffin pan and set aside.

Step#2: Place the pastry dough on a floured surface and roll with a rolling pin a few times using a round cookie cutter to cut at least 12 rounds.*I use store-bought pastry dough to speed up the preparation process. But you can use homemade pie dough.

Step#3: Next, press around the edges with a fork to create tiny lines. This is optional, but it will give a nice touch to the bites.

Step#4: Carefully place the small pie crust circles into the mini muffin pan. Use your fingers to press the perimeter of the dough to fit the muffin tin.

How to make the pumpkin filling:

Step#5: In a big mixing bowl, combine the pumpkin puree, condensed milk, spices, and egg. Whisk until all the ingredients are well combined.

Step#6: Place the batter into the pie dough using a mini ice cream scoop for an easy process or a small spoon. Place it in the oven for about 20 to 25 minutes or until the center of the pie is set. The mini pies will look puffy when they come out of the oven. However, they will come back down when they cool down. Let them cool down on the counter, and then top them with whipped cream. This will cover the wrinkly top and make them look and taste delicious.

Ingredients

  • 1 puff pastry sheet
  • 1 15 oz. pumpkin puree (make sure not to confuse with pumpkin filling)
  • 1 large egg (room temperature)
  • 1/2 (12 fl oz can) condensed milk
  • 1 tablespoon pumpkin spice
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • A pinch of salt (to balance flavors)
  • non- stick spray

Notes

*I use a store-bought crust to speed up the preparation process. But you can definitely use homemade pie crust.
