Today, I decided to make this vegetarian Quinoa Salad. I like to make recipes like this one for a quick healthy lunch. This simple salad is perfect for a quick lunch, picnics, or as a simple side dish.
This is what you’ll need to make this Quinoa Salad.
This vegetarian quinoa salad is a great source of fiber, vitamins and high in protein.
The first step is to cook the quinoa. While the quinoa is cooking, dice all the vegetables. To cook the quinoa, follow the package instructions or go to my simple recipe to cook quinoa.
Then, combine the cooked quinoa with all the diced vegetables and some raisins.
Making this salad is as easy as cutting all your veggies in the 15 minutes that it takes to cook the quinoa. Proceed to mix everything and voila a healthy and delicious salad in just minutes. Chill before serving. This quinoa salad tastes even better the next day, and It’s also a great recipe to make in advance.

Light and Easy Quinoa Salad
Ingredients
- 1 cup quinoa cooked
- 1 cup cucumbers mini
- 1 cup raisins
- 1 cup sweet peppers
- 1 cup grape tomatoes
- 1/2 cup cilantro
- 1/2 cup red onion
Ingredients for the vinaigrette
- 1/3 cup lemon juice
- 1 tablespoon honey
- 1 teaspoon salt
- pinch black pepper
- 1 teaspoon olive oil
Instructions
- Cook quinoa. Follow the quinoa package instructions or, you can follow my simple recipe on how to cook quinoa
- While the quinoa it’s cooking, dice all the vegetables
- Next, combine the cooked quinoa with all diced vegetables and add some raisins.
Vinaigrette:
- In a small container, combine the lemon juice, honey, olive oil, salt and, black pepper.
- Drizzle the vinaigrette over the quinoa combination and refrigerate for at least half -hour . Enjoy!
