Cilantro Lime Rice is one of my favorites. It’s the perfect side dish to compliment chicken, pork chops, or as a base for a burrito bowl. The rice is fluffy and flavorful. For those of you that despise cilantro, don’t walk away; you can still make this recipe; skip the cilantro. I will not judge you, I promise 🙂 The rice has many components to it that infuse so much flavor anyways. If you are like me and love cilantro, you will be more than happy!

There are many different methods to cook rice; over the years, I have found the one that works for me, and I share my tips with you on that post. It’s better critical when cooking rice to know the water-rice ratio to make fluffy, delicious rice. I recommend 1 cup of water for 1 cup of rice if you use short or medium grains. . If you are using white long-grain rice, use 1 ½ to 2 cups of water for 1 cup of rice. Another important trick is not to cover the rice during the boiling process. It’s essential to wait until all the water evaporates. So now that we cover a few tricks to make fluffy rice, let us make this fantastic Cilantro Lime Rice.
The ingredients you’ll need to make this Cilantro Lime Rice Recipe are straightforward:
- Garlic cloves (minced)
- Oil
- White Onion
- Better than bouillon dissolved in 1 ½ cup of water. (substitute with low sodium vegetable broth or just water and salt to taste)
- White rice
- Unsalted butter
- Cilantro
- Lime
How to make Cilantro Lime Rice Recipe
- In a small pot, heat the oil in medium-high and sautee the garlic and onion for about 1 minute. Then, add raw white rice and stir to combine.
Next, add 1 tablespoon of Better than bouillon dissolved in a 1 ½ cup of water. I got this at Costco, or you can get it on amazon. I highly recommended it. It adds a great flavor to the rice. You can substitute with water and salt to your taste or chicken broth (low sodium). As soon as it starts boiling, reduces the heat to medium-low to prevent the rice from sticking to the bottom, causing it to burn.
Let the rice simmer in water until all of it is completely absorbed. Cover and reduce the heat to low and let it cook for about 15 minutes or until grains are soft and tender.
Cook for 15 minutes, then remove from heat and let sit for 10 minutes. Meanwhile, minced a handful of cilantro and squeeze 2 limes (about 2 to 3 tablespoons of juice).
Then, fluff the rice with a fork and serve it in a large serving bowl. Add unsalted butter, cilantro, and lime juice, stir to combine. And your delicious Cilantro Lime Rice is Ready!
