It’s true that for those of us who have school-age children, mornings could be challenging when sending them off to school. Part of that challenge is due to the stress of what one should feed their kids in the morning or pack for lunch. With back to school around the corner, I want to be prepared not only with the school supplies my son will need but also with ideas for a fast, easy and healthy breakfast/snack that I can offer him. This chocolate, banana bread mini muffins are a great option!
At the beginning of every school year, things can get hectic in my house. We get so used to the summer schedule and waking up a little later than usual that when summer comes to an end our biological clock has to adapt to waking up early and going to bed on time. The first few weeks of school I like to have some kind of muffins ready to just grab and go.
I know I can always go to the supermarket and get those pre-packaged muffins. However, I like to have more control of the ingredients and the amount of sugar that my son consumes and making these muffins myself gives me that security. My husband loves sweets and Justin(my son) has the same sweet tooth, so I find it’s a win-win situation if I make the muffins myself to keep both of their sugar intake controlled :). They also love my double chocolate chip cookies. they are really good!
This recipe is totally fuss-free. There is no need for an electric mixer, all you need is a mixing bowl, a fork, and a spatula.
I like to make them small just to make it easier to pack inside my son’s lunch box. I make a batch on Sundays and freeze them to use for the whole week(well if my family doesn’t eat them first). By making these muffins in advance it makes my mornings a little bit easier and I don’t have to struggle with thinking what should I make for breakfast. I also like to make two different types of muffins just to have a variety for my son.
How to make Chocolate Banana Muffins:
First, preheat oven to 350 degrees and get your muffin pan ready, you can either use baking spray or mini cup liners. I use a 24 mini muffin pan. Then, melt the butter and let it cool. Set aside
In a large mixing bowl, mash the banana using the fork
proceed to add the melted butter, vanilla, whisked egg, sugar, salt and baking soda to the mashed banana
Using a small spoon or a measuring spoon, fill up each muffin cup with the batter.
Insert the chocolate chunk pieces and bake for about 20 minutes or until a toothpick comes out clean.
Remove from the oven and let them cool before serving.

Chocolate, Banana Bread Mini Muffins
Ingredients
- 3 ripe bananas
- ⅓ cup unsalted butter melted
- 1 ½ cup flour
- ½ cup sugar
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 large egg
- 1 cup chocolate chunks
- a pinch of salt
Instructions
- Preheat oven to 350 degrees and get your muffin pan ready. I use a 24 mini muffin pan
- Melt the butter and let it cool. Set aside
- In a large mixing bowl, mash the banana using the fork and proceed to whisk an egg
- Add the melted butter, vanilla, egg, sugar, salt and baking soda to the mashed banana
- Lastly, add the flour and give it a stir with the spatula until all ingredients are well combined
- Using a small spoon or a measuring spoon, fill up each muffin cup with the batter.
- Insert the chocolate chunk pieces and bake for about 20 minutes or until a toothpick comes out clean
- Remove from the oven and let them cool before serving. Enjoy!
