CHICKEN BRINE RECIPE

Brining chicken is a method that can significantly enhance the flavor and texture of the meat. It comes with several benefits that you should know about. Here are some benefits and tips for brining chicken

Benefits:

1. Moisture retention: Brining helps the chicken to retain moisture during cooking, resulting in juicier and more tender meat.

2. Flavor infusion: The salt and other seasonings in the brine penetrate the chicken, adding flavor throughout the meat.

3. Tenderization: The salt in the brine helps to break down the muscle fibers in the chicken, resulting in a more tender texture.

4. Even cooking: Brining promotes more even cooking, reducing the risk of dry or overcooked spots in the chicken.

Tips:

1. When brining chicken, use a pan or container large enough to submerge the chicken.

2. Brine chicken for at least 2 hours but No More than 24 hours.

3. It’s important to use kosher salt in this recipe rather than table salt as the two measure differently. To avoid making your chicken too salty, I suggest using kosher salt or cooking salt. If using table salt decrease the amount to 1 teaspoon instead.

4. Ensure the water is completely cooled before you add the chicken to avoid bacteria forming in the chicken. My recommendation is to cool it for at least 30 minutes before refrigerating.  If I’m short on time, I sometimes add a cup of ice cubes to the brining solution to speed up the process, but safety should always be a top priority. While preparing the brining solution may seem like an additional step in the cooking process, I believe it’s worth it.

5.  Do not put the chicken in the pot until the brine mixture is fully cooled to avoid any health hazards. Keep in the fridge for at least an hour.

Following these tips, you can achieve a perfectly brined chicken that guarantees juicy, flavorful, and tender meat after roasting. I use this brine to make this Roasted Spatchcock Chicken.

What other desired seasoning can be used in the brine for chicken?

  • Honey  or sugar for a touch of sweet
  • Orange instead of lemon

What is the difference between using kosher salt and table salt in the recipe?

Table salt and kosher salt measure differently, so using table salt in your chicken recipe may lead to a salty outcome. I  recommend using Diamond Crystal kosher salt instead.
