Budget-friendly Chicken Thighs  with Cabbage Salad

Juicy, tender and flavorful! These chicken thighs are not only budget-friendly, quick and simple to make but they are perfect for a healthy satisfying lunch or dinner. I love recipes that can be made in 30 minutes or under and this is one of those.

A few days ago I was spending time with one of my daughters. We did a spa day, drank some wine and of course, we cooked. It would be a crime if I didn’t include food:). I wanted to cook something simple and fast so there it was in the fridge a package of boneless skinless chicken thighs. I grabbed a few spices from my pantry and voila! This recipe came to life.

The chicken thighs came out so tender and delish that I decided to share this recipe with you. These are perfect over white rice or paired with my yellow corn rice. In this recipe, I decided to serve over a delicious cabbage salad which I drizzled with one of my favorite salad dressings.

These are the ingredients you’ll need: 

  • Boneless skinless chicken thighs
  • Garlic
  • Salt
  • Black pepper
  • Chili powder
  • Smoked paprika
  • oil

To make the Salad:

  • Red cabbage
  • White cabbage
  • Grape tomatoes

And for the Salad dressing:

  • Olive oil
  • salt
  • Ginger
  • Apple cider vinegar

How to make Juicy, tender and flavorful chicken thighs

Step 1:  Season the chicken thighs with garlic, salt, chili powder, black pepper, and smoked paprika. Then heat the oil in a large skillet over medium-high heat and place the chicken.

Step 2: Sear the chicken thighs for about 5 minutes or until they are easy to flip over. Sear the other side for an extra 5 minutes and add some water.

Step 3: Continue cooking until the water evaporates and the meat starts to brown. Flip the meat allowing the other side to brown as well. Now its time to let the meat rest for a few minutes before serving.

Ingredients

These are the ingredients you’ll need:

  • 4 chicken thighs boneless skinless
  • 6 garlic cloves
  • 1 tablespoon salt ( I use kosher salt)
  • 1 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1 1/2 teaspoon smoked paprika
  • 1 tablespoon oil (I use canola oil)

To make the Salad:

  • 1 cup red cabbage
  • 1 cup white cabbage
  • 1/2 grape tomatoes

And for the Salad dressing:

  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 2 teaspoon ginger (puree)
  • 1/3 cup apple cider vinegar

  • Season the chicken thighs with garlic, salt, chili powder, black pepper, and smoked paprika. Then heat the oil in a large skillet over medium-high heat and place the chicken.
  • Sear the chicken thighs for about 5 minutes or until they are easy to flip over. Sear the other side for an extra 5 minutes and add some water.
  • Continue cooking until the water evaporates and the meat starts to brown (about 2 to 4 minutes). Flip the meat allowing the other side to brown as well for about 2 minutes. remove from the heat and now its time to let the meat rest for a few minutes before serving.
