Best way to Kickstart Your Morning – Scrambled Eggs ( Two Easy Ways)

One of the best ways to kickstart your mornings and reach your goals is to eat a healthy breakfast. We all know that breakfast is the fuel that provides the energy we need to take on the day. One of my favorite choices of protein for breakfast is eggs. They are versatile, affordable and so satisfying. I’ve noticed that when I have eggs for breakfast, it holds me off for a while because of how filling it is. Today I’m bringing you two easy and delicious ways to make scrambled eggs.

My first choice:

This Scrambled Egg Whites Recipe has lots of nutritional benefits. Did you know that the vast majority of protein content is in the egg whites?  It also contains essential minerals that are vital for our general health, minerals such as Potassium(54 milligrams). Egg whites are also perfect for those of you who are having some issues with high cholesterol as they have No Saturated fat (bad fat).  I hope these facts are helpful to you:)

What I love about this Scrambled Egg Whites Recipe is that it is packed with lots of flavors.  The egg whites are combined with plum tomatoes, red, yellow and orange peppers that provided a great source of vitamin C. Most bell peppers can be found in your supermarket all year round, especially in the summertime when they are in season making them more affordable. I also like to add jalapeno peppers for a nice kick. I love spicy food so adding something spicy is a must for me. If I could I would put these peppers on anything and everything.

Egg-whites,-onion,peppersTIP: I use two jalapenos in this recipe but feel free to omit them or use on your own discretion. If you like your eggs very spicy,  leave the seeds on the pepper, if not just remove the inside of the jalapeno for a more mild taste. I also added red onion and some cilantro.

How to make Scrambled Egg Whites over Avocado Toast:

The first step: Chopped all your vegetables and set aside. Then, whisk the egg whites and proceed to add all your chopped vegetables. Whisk again until all is well combined. Season with salt and black pepper.

Next, In a nonstick skillet add the oil and place on the stove over a high medium temperature. When the oil is hot pour the egg white mixture.

Lastly, let the mixture cook for about one minute or two without stirring it. Then, begin to stir until all the egg whites and the vegetables are well combined. Reduce heat to a low setting and keep cooking for about 3 to 4 minutes. The egg whites will cook around that time depending on your stove.

Once they are cooked, its time to enjoy!

How to serve this Scrambled Egg Whites:

I have to say, there is nothing else needed for this delicious scrambled egg whites recipe. But if you want to take this recipe to the next level, just grab some whole grain bread, add some avocados mashed and serve the scrambled egg whites on top. I added some extra cilantro and of course a few slices of jalapenos peppers to garnish. For the avocado mash, I added some lemon for flavor and to prevent the avocado from getting brown in color. I also added some salt and pepper to the avocado (optional)

My Second choice: Scramble Eggs with Spinach and Onions

For this recipe, I decided to add some almond milk but you can use regular milk as well. this is a perfect recipe for a huge crowd. I added spinach which has anti-inflammatory properties, lots of minerals like magnesium, iron calcium and many other nutrients that are beneficial to your health and skin care. I also added red and green onions.

How to make Scramble eggs with Spinach and Onions

The first step: chop the green and red onions and set aside. In a medium mixing bowl whisk the eggs and add some milk. Then in a nonstick skillet, heat the oil over medium-high temperature. Proceed to pour the egg mixture into the hot skillet.

Next, add the spinach and onions and season with salt and pepper.

Then: Mix until well combined. Cook for about 4 to 5 minutes
