This air fryer Parmesan Fingerling Potatoes and Asparagus recipe has become one of my go-to dishes for its simplicity and incredible taste. This is one my daughter shared with me and I am loving it. You can serve at the side of my Sausage, peppers, and onions recipe.

Hey, this recipe is so simple that I feel it doesn’t need much of an explanation, but words of encouragement to make it. The ingredients you’ll need are:

  • Fingerling Potatoes.ย 
  • Asparagus:ย 
  • Parmesan Cheese: I use freshly shredded parmesan cheeseย 
  • Spices: I use a combination of paprika, oregano, thyme, and garlic powder.
  • Lemon: I use half of a lemon
  • Oil: I use olive oil

How to make this Side Dish:

Preheat your air fryer to 400ยฐF (200ยฐC). If your air fryer requires preheating, be sure to follow the manufacturerโ€™s instructions for the best results.

Prepare the vegetables: The first step is to wash and slice the fingerling potatoes. As for the Asparagus, trim asparagus stalks about 2-3 inches from the bottom.

Season: In a large bowl, toss the halved fingerling potatoes and the asparagus with paprika, oregano, thyme, garlic powder, and olive oil. Make sure each piece is well-coated. If is your preference season the potatoes and asparagus separately.

Air Fry the potatoes: place the seasoned potatoes in the air fryer basket in a single layer. Cook for about 15 minutes, shaking the basket halfway through to ensure even cooking.

Add asparagus to the air fryer. After the potatoes have cooked for 15 minutes, add the asparagus to the basket and cook for an additional 5-7 minutes or until the asparagus is tender, and the potatoes are golden brown and crispy.

Serve: Transfer the potatoes and asparagus to the large bowl or if you want you can use a serving dish and garnish with some parmesan cheese and lemon juice.
