This meal will give your spaghetti plates a new lease on life. It goes great with white rice or a quick-to-grab choice like plantain cups, which is what I generally offer at home.
Shrimp in a spicy chipotle Tomato Sauce
First, I have to confess that I’m allergic to shellfish. So I was not able to taste the shrimp myself. I always get envious of those who are fortunate enough to eat shrimp. So I replace that satisfaction with cooking it. I have no idea how shrimp taste; however, the look on my family’s faces when eating this shrimp says it all to me. I went even further when I decided to share this recipe with you. I asked them to describe the flavors for me (and you). These are just a couple of words my family uses to describe this shrimp in a spicy chipotle tomato sauce recipe: Delicious, flavorful, lightly spicy, and one or two even included the word “exquisite”!
The shrimp are seasoned and then sauteed for one or two minutes before being combined with a delicious tomato sauce.
The sauce has a secret ingredient that gives a kick of flavor to the shrimp.
And the secret is “chipotle pepper.” Just a tiny amount of this pepper goes a long way. My family devoured it all in minutes living behind no leftovers.
How to Make Shrimp in a spicy chipotle Tomato Sauce
The first step is to defrost the shrimp by placing them in a large colander and rinsing them under cool running water for about 1-2 minutes until the ice exterior is removed. Make sure to shake the colander to remove any excess water.
Then, place the shrimp in a large container and season with salt and pepper to your taste. Then add the juice of one lime and toss to combine. Set it aside while we prepare the sauce.
Using a blender, combine crushed tomatoes, garlic cloves, and a small piece of chipotle pepper. Just remember, this goes a long way in flavor. Set aside.
Let us combine cook Shrimp and combine them with Sauce:
Next, in a large non-stick skillet, add one teaspoon of oil. Continue by sauteing the onions for 2 minutes, or until they look translucent. Then, add the shrimp and cook for about 2 minutes on each side. Add the tomato sauce mixture, stir to combine, and let it cook for about 5 minutes.
Garnish with some green onions, and enjoy!

- 20 -30 large shrimp (raw, peeled deveined, tail-on)
- 1 teaspoon olive oil
- salt and pepper to your taste
- chipotle pepper in adobo sauce a tiny piece goes a long way
- 1 ½ cups crushed tomatoes ( I use San Marzano, crushed tomatoes)
- 1-2 cloves garlic
- 1 medium lime
- 1 medium white onion dice
