It’s recommended to remove them from the oven at 140°F, as the temperature will rise as they rest.

What kind of pork chops should I use?

For this recipe, I recommend using bone-in pork loin chops, as they tend to be more flavorful and moist. Bones add a unique flavor to the meat, and removing them may result in a less satisfying taste. Alternatively, you can use rib chops or center-cut chops.
